Sometimes I need a quick recipe that is not only tasty but also looks absolutely beautiful for company! This is roasted chicken recipe is very simple and can be made quickly with little mess. I also like that it's a one pot recipe so everything is in one pleasing pottery! It's a great recipe for anytime of the year as well!

4 TBSP Rustic Herb Seasoning

4 TBSP Olive Oil

A bag of Root Vegetables and onions: Great options are carrots, turnips, potatoes, etc.

4-5 Chicken Thighs with Skin On


Recipe Instructions

  1. Put your chicken in a plastic bag with 2 TBSP olive oil and 2 TBSP of the rustic herb seasoning. Do the same with the vegetables in a separate bag. Place in frig at least 2 hours before cooking time. I do this step The Day Before.

  2. Spread out vegetables in your favorite pottery pan. Place chicken on top with skin up. The chicken skin will slowly drip on top the veggies as it bakes to add more oil for the pan but also amazing flavor!

  3. Bake 425 for 1 - 1.25 hours or until Chicken temp is 165.
