Gluten Free Apple Oatmeal Muffin Recipe

In Wisconsin, there are so many apples to harvest in fall and it's a free food source because it seems everyone is willing to just give them away. Just a beautiful picture of how God provides and how "our cup overflows". During the fall I peel and freeze 5 gallons of diced apples for all my recipes.
I am a carb girl through and through. This recipe satisfies my carb craving and is an amazing breakfast or snack!
Gluten Free Apple Oatmeal Muffin Recipe
1 1/2 Pamelas Pancake Mix or Your favorite Gluten Free Flour
1/2 Cup Gluten Free Oats (I like Bob's Red Mill)
1/2 Stick Butter Cut into Flour
3 Cups Diced Apples
1 Tsp Vanilla extract
1 Tsp Aluminum-free baking powder
1/4 Cup Milk
1 TBSP Cinnamon
2 Eggs
Dash of Salt
1/2 Cup Maple Syrup
Baking Instructions
Place flour and oats in a large mixing bowl and cut butter into flour with a pastry knife.
Add all other ingredients in any order and stir until mixed.
Bake at 350 degrees in a Muffin Pan for 20- 25 minutes.
Tips and Tricks
I double this recipe and either freeze the other half or keep the batter in my frig and make muffins fresh daily for the week.
I typically use my frozen diced apples from the fall harvest.
The gluten-free flour on this is pretty specific, Pamelas Gluten Free PANCAKE Mix. The pancake mix is the only gluten free flour mix by Pamelas I ever use. It has special features like buttermilk.
